Lipid/lipoprotein compositions of ground beef were determined and compared to levels in minced beef. Ground beefs were frozen at -15, -25 and -35 degrees C for up to 90 d. Lipid/lipoprotein composition was determined with a Clebio 3000 (Clebio Ltd., Canada) and the results were compared to those obtained from minced beef. Total lipid levels remained relatively constant in ground beef frozen at -15 degrees C for up to 90 d and averaged 71.3 g/kg (0.28%). Ground beef frozen at -25 degrees C showed a slight increase in lipid levels over time and averaged 74.2 g/kg (0.29%) after 90 d. Ground beef frozen at -35 degrees C showed an initial increase in lipid levels over time and averaged 76.0 g/kg (0.30%) after 10 d, which continued to increase to an average of 79.2 g/kg (0.32%) after 90 d. Lipid/lipoprotein profiles of ground beef frozen at -25 and -35 degrees C were similar to minced beef. Lipid/lipoprotein profiles of ground beef frozen at -15 degrees C were significantly different from that of minced beef, and the frozen meat contained slightly more lipid and significantly less lipid/lipoprotein than the minced beef. Frozen ground beef may contain more lipid than ground beef stored at -15 degrees C because of the increased lipid release from the meat during freezing. This study has shown that lipid/lipoprotein composition of ground beef can be determined by using a Clebio 3000 (Clebio Ltd., Canada), a commercial instrument available in meat processors and stores.Ruthenium-catalyzed decarboxylative cycloadditions: scope and applications.
