Ground beef frozen at -35 degrees C showed an initial increase in lipid levels over time and averaged 76.0 g/kg (0.30%) after 10 d, which continued to increase to an average of 79.2 g/kg (0.32%) after 90 d. Lipid/lipoprotein profiles of ground beef frozen at -25 and -35 degrees C were similar to minced beef. Lipid/lipoprotein profiles of ground beef frozen at -15 degrees C were significantly different from that of minced beef, and the frozen meat contained slightly more lipid and significantly less lipid/lipoprotein than the minced beef. Frozen ground beef may contain more lipid than ground beef stored at -15 degrees C because of the increased lipid release from the meat during freezing.
